HMF
One of our favourite labs is Analytica in NZ. As the New Zealanders have such a huge honey industry, they also have great labs and tests - for Manuka Honey. We piggyback off their Mānuka 3-in-1 test for the HMF results. HMF stands for 5-hydroxymethylfurfural and is an important international measure of the age and heating of honey.
The DHA (dihydroxyacetone) & MG (methylglyoxal) measures on these tests are applicable only to Manuka as they measure non-peroxide activity (NPA) - and WA honey has heaps of peroxide activity.
My understanding is that these tests were developed as Manuka UMF levels increase the more you heat the honey - which is not good for honey. So the HMF proves the lower/no heating.
On Test 1 - various samples of WA raw honey in market place. Elixir Honey is highlighted in yellow. Note HMF column - lower score is best.
On Test 2 - only Elixir Honey
