Why on earth did you shut your on-line store? We loved our on-line store. It enabled us to sell honey around the world. At the start of COVID we shut down the international postal orders. Deliveries were taking ages and breaking a lot. In October 2020 sales started to slow. As we live in one of the most remote places in the world, courier fees get more expensive when we book less runs. This meant that our on-line business was no longer profitable to run.

How do I know my honey is really raw? Raw honey will set; sometimes fast! Cold temperatures and variety determine how fast. This is because the sugars have not been modified by heat. We pack no raw honey mid winter - it's all set in jars that have been packed in summer. So beware of honey that's runny all year round (unless it's Jarrah).

What do I do if I get a bee sting? More away from the bee/bees calmly. Remove the sting/s quickly by scraping it out with a butter knife or credit card. Try not to disturb the venom sack. Put honey on the sting to make it stop hurting.
Why do bees sting? Bee stings are an occupational hazard for beekeepers. Bees sting in self defence. If a bee feels that a person or animal is threatening their colony or their queen, they will sting. The bee dies after stinging and so gives its life to help save its colony. The little 'hooks' on the bee's stinger keeps the sting staying in place. The bee sting also has venom to cause a painful reaction.
Why do we prefer to pack in glass? You keep good wine safely in glass bottles for ages knowing there will be no chemical reactions or tainting. But glass is fragile and packaging is getting better so maybe one day...
I want to use honey instead of sugar - do I need to change recipes? Use the same weights but reduce the moisture by 1/4. For example if you are making a cake that needs a cup of sugar and a cup of milk, substitute a cup of honey and only put in 3/4 cup of milk.
