Lemon Delicious

I've been having this desert for longer than I can remember. And have recently converted it to take honey instead of sugar, it works a treat. Every recipe for this always seems so involved, my mum doesn't even separate the egg and beat the whites, she just throws it all together and it's done.

Ingredients
     3 eggs separated
     1/2 cup "Elixir Raw Honey"
     2/3 cup of milk
     1T self raising flour
     rind and juice of 2 lemons
     pinch of salt
     1 T castor sugar

Method:
     Place yolks, honey, milk, flour and lemon in the food processor and whiz.
     Beat whites and salt to peaks then beat in castor sugar.
     Fold whites in to lemon mixture.
     Pour into greased deep ovenproof dish that is standing in a pan of water (about ½ the height of the
     pudding).
     Bake in moderate over for 50-60 mins.
     I watch very closely, as I don't want it too runny or with no sauce (then it tends to go the texture of
     an ice hocky puck!). You want nice pudding on top and good amount of sauce in the bottom; I slip a
     knife down the side to check.
