Jarrah trees flower every two years (2008, 2010…). The buds appear on the trees a year before they go into blossom! Jarrah honey is highly prized for its medicinal qualities and it tastes good too. Jarrah honey has a high fructose and low glucose level (naturally occurring in the jarrah flower) and so jarrah honey takes ages to set (5-10 years). Jarrah honey is not always dark; its colour depends on what land the trees are growing on. Whatever the colour, Jarrah should always have the same distinctive jarrah honey taste. |
