Honey Muesli

This recipe was originally obtained from "Diet for a Small Planet" and has been tweaked and improved. It seems to be enjoyed by most. Fussy eaters have been known to eat this dry from the cupboard as a healthy snack! It takes about 30 - 45 minutes to prepare and lasts us for about 2 weeks.

750g bag of rolled oats
1 cup of wheat germ
2 cups of LSA (linseed, sesame and almonds)
¼ cup dry skim milk powder
2 tsp brewer's yeast
1 ¼ cups shredded coconut (optional)
½ cup vegetable oil (canola or sunflower)
½ cup honey
1 tsp vanilla


1. Preheat oven to 210° C.
2. Put oats into large pan and toast in oven till nicely brown, shaking every few minutes. (This step takes about 20min).
3. Add wheat germ, LSA, milk powder, brewer's yeast and coconut - toast for 5 minutes.
4. Stir in oil, honey and vanilla (which you have combined).
5. Toast 5 more minutes, store in loosely covered jar.
6. Enjoy with pollen sprinkled on the top.
