I've been having this desert for longer than
I can remember. And have recently converted it to take honey instead
of sugar, it works a treat. Every recipe for this always seems so involved,
my mum doesn't even separate the egg and beat the whites, she just throws
it all together and it's done.
Ingredients
3 eggs
1/2 cup Elixir Honey
2/3 cup of milk
1T self raising flour
rind and juice of 2 lemons
pinch of salt
1 T castor sugar
Method:
Place everything a food processor and
whizz.
Pour into greased deep ovenproof dish that is standing in a pan of water
(about ½ the height of the pudding).
Bake in moderate oven for 50-60 mins.
I watch very closely, as I don't want it too runny or with no sauce
(then it tends to go the texture of an ice hockey puck!). You want nice
pudding on top and good amount of sauce in the bottom; I slip a knife
down the side to check.
